This video shows how to change covenants in World of Warcraft Shadowlands beta.
In order to switch covenants you need to speak with your chosen covenant NPC in Oribos (e.g. Secutor Mevix from Necrolord). Once you confirm that you wish to leave your current covenant you will receive a quest to finish the objectives.
