You can have both elementals out as Ele, unless you are talented into Primal Elemental — then you can only have 1 out at a time, and they override each other if you try to summon them before the other expires.
Go necrolord. You get that shield at 50% health from the Marileth soulbind + a much better covenant ability for ele. At 30 Renown you get cc immunity + health back from fleshcraft, which just got buffed to 40% of your health rather than 20%. Venthyr is really an enhance covenant imo since harvest becomes instant + boosted by MW. For ele you get an extra flameshock as well as the ability to lavaburst multiple people at the same time. I always do flameshock > primordial wave > flameshock, then lavaburst and you get to see three lavabursts fly out + all the mastery procs. It can be really fun.
If you choose necrolords, your lava burst can be a minigun and definitely one shots people
