Those souls, the ones that look like generic ghosts are souls from worlds we have no frame of reference for so they appear as more of an amorphous blob of sorts. This was said at in interview back at Blizzcon when the expansion was first announced. Although there is a soul later in the story that looks this way but has a familiar name which makes it confusing, personally I feel if the one I am speaking of is the same one that we faced in the past then someone messed up on his appearance.
There are only two mounts that work in the Maw. One from a rare that you can kill in the Beast Warrens when it's Shadehound hunts, and the other for clearing layer 8 of the Twisting Corridors of Torghast which isn't available yet and probably won't be for a couple weeks.
