Thrall was the Warchief from Warcraft – WoW – BC – Wrath in Garrosh was put in place by Thrall in Cataclysm (2010) because Thrall had to work with the Earthen Ring (a bunch of Shaman and Far Seers) to literally hold the world together until we could fix the Cataclysm basically. Despite Thrall's skin being green he DID NOT drink the Blood of Mannoroth on original Draenor. His parents didn't either, their skin was tainted by the overuse of Fel magic from the warlocks of the Horde as it seeped into the land and therefore their water and food as well. The specific scene where Draka (Thrall's mom) notices her and Durotan's (Thrall's dad) skin peeling happens in the novel Rise of the Horde. Also the reason for the novels telling some lore is the old 1994-1995 games kind of had to have their lore retold after Warcraft 3 and WoW was a thing because the lore wasn't quite as heavy in the old games and some writing had changed simply because writers moving on.
Tbh if you are playing retail it makes no difference between being Horde or Alliance. You will lvl through the same territories mostly, barely exploring them since levelling is so fast, and you will soon go to expansion territories, which are empty and meaningless. The true experience is in Classic Era
Should check out deathknight as an alternate to warrior. Their starting area is pretty cool.

Garrosh a little kid when the orcs drank the demon blood, he never did. His dad, Grom encouraged the other orcs to take the blood. Later, im WC 3 Grom kills the demon whose blood it is, freeing all the orcs from their demonic chains. Thrall makes Garrosh leader partially as debt to Grom. After Garrosh goes Old God crazy in MoP and loses, a time traveling dragon takes him back in time to before the orcs drank the blood and with his knowledge of upcoming events convinces the orcs that he's a prophet and they they should not drink the blood. Then that cutscene you watched happens.
