cool video! I'm guessing that the "NPCs" are just models used to compare the player character sizes to buildings or just general landscape, like the mountain they were next to.
this is still during the period where blizz employees used to leave little nuggets around the game for the exploit explorers, before we had a period where they started covering everything up. so this could just be a fun little thing a dev left behind for the explorers.
They always add those (sometimes is an orc) They are used to best measure the scale of the zone. They are always removed from the playable zones but often, when they are outside the playable zone, they just leave them there.

interesting, i think the last time they added a new npc in deepholm was for the BFA blacksmithing tool quests

Those map texture NPCs are used for world building/map creation. It helps the designers judge for scale. They have been used since the earliest builds of wowedit (the program the designers use to build terrain). Mostly you'll see Orcs and Human models being used for scale but I do seem to recall other races but VERY rarely.
I opened retail for the first time in a while so I could replicate your steps and break out of bounds. I ran south and clipped into a cave that was added in a later expansion for a secret mount. such an interesting experience completely inspired by your videos, thanks for making them
I sometimes wonder if Blizz regret making the DH. They are like hidden secret sniffing dogs with all their movement crap.
Hi ! I remember exploring this zone and discovering this uzumaki symbol and wondering what it was plan for. You can also find a closed cave with a chair and a skull on it. I was able to go through with my warrior heroic jump and it supposed to be a cave used for a quest.
I really like your video, I spend my time to exploring the game too but always regrets MJ Island that I never saw by myself, or Gilijim/Lapidis islands
